One-Pan Lamb

INGREDIENTS |

1 Brown onion sliced |
1 Red onion sliced |

1 Eggplant chopped |
1 Red capsicum chopped |
|
1kg lamb shoulder diced |
5-6 garlic cloves sliced |
|
Paprika |
Salt and pepper to taste |
|
3 tbsp Capsicum paste mixed with water |
4 tbsp butter |
DIRECTIONS
In a baking tray, combine all the meat and veggies and season with salt, pepper and paprika.
Scatter the butter on top then cover tray with baking paper and foil and place in a preheated oven 200 degrees Celsius for 1 hour.
Remove baking paper and foil and return to oven for 5-10 min until sizzling and golden.
Serve with bread to mop up those juices.
