The brisket slicing knife 36cm/14 inch has an extra-long blade for slicing large cuts in one continuous stroke, with scalloped indentations that reduce food cling. The butcher’s knife 26cm/10 inch has a curved, wide tip and a long blade for precise large cuts, trimming and slicing. The flexible boning knife 13cm/5 inch has a tapered, curved blade for de-boning, trimming fat and sinew, and working around bone in tight areas. The meat claw shreds and holds a joint steady for carving.
Every blade is X50CrMoV15 Japanese stainless steel, hardened and tempered over 14 steps to 55-57 Rockwell, then hand-sharpened to a 26° cutting angle. The optimised bolster protects the hand and lets the full edge be used and sharpened to the heel.
The reverse-wedge, anti-fatigue handle is full tang and triple riveted in FSC™-certified Pakka wood, layered hardwood and resin engineered for strength. The six-pocket knife roll is cotton and polyester with a genuine leather handle and can be cleaned by hand. Five blade guards are included, one per knife and two spare.
